I used the newbie guide to the right to rip my first DVD...yep, that worked alright. However, I noticed I only got one audio file. Do I need to change the "encode streams" in settings (in SmartRipper) to get all the audio streams, or will this cause problems? Or do I need to do this somewhere else?

Actually Smartripper gives you not even one audio file.
You have the .vob files, that contain all audio tracks. Extract the audio track you want or two or all, as you like, with a audio decoder. DVD2AVI has an audio decoder, but you can not use dvd2avi for audio separately. If you want to extract more than one audio track, I recommend vob2audio. -
DVD2AVI does allow you to select the track you want to decode. Just select a different track, and save the project under some other name. (or use some other software like VOB2AUDIO).
