avi>dvd problem

I have converted numerous avi files (both divx and xvid) to dvdr without any problems. My question is I usually use tmpgenc to convert however i noticed an ever so slight pause every second or so in fast moving frames. I have tried to use Ulead DVD workshop and DVD MOviefactory and they dont have the pause, however, one of the major problems i have found (and can't figure out the answer) is that it converts to a full screen picture. For films that are in letterbox format, how do i add or change the borders because by default it sets it to full screen stretching the picture? Any help on this would be gratefully received
