I am capturing VHS stuff through my ADVC100 but I'm wondering does it make a difference if the VCR is NICAM or just HI-FI sound?? Does the VCR output the same signal to the ADVC100 in any case??

I'm not quite sure what the question is, but...
Yes, the VCR does make quite a bit of diffrence, even when capturing through a DV converter. Unless the DV converter has a TBC you are going to have many analog problems affecting the DV converter as well.
Look up information on TBC ( Time base correctors )
