I am wondering how do I get the length of movies that I burn on a 4.3 dvd to be past 120 mins?

If I understood your question correctly, you want to fit more than 120 minutes on a 4.7Gb DVDR.
If so, the capacity in minutes is a function of the bitrate of the movie. Double the bitrate gives you half the time capacity.
4.36 Gb gives 1 hour if bitrate is almost 10Mbps. Cut the bitrate in half and you get 2 hours. Cut the bitrate to 2.960Mbps and you can fit 3 hours and 20 minutes (just encoded such a movie).
You control the bitrate by selecting appropriate options for the MPEG-2 encoder that creates the DVD movie. The more I learn, the more I come to realize how little it is I know. -
And using VBR instead of CBR can let you fit even more on the DVD with the same visible results as using the CBR. Lowering the audio bitrate can help too.
