If memory serves, they only output composite video. Not S. And what connection does what I can't remember either.

    video in
    audio in
    video out
    audio out

Audio is unbalanced and single channel.
Audio is normally controlled by the audio monitor switch on the deck (ch1 or ch2 or mix).

If you want Y/C video, you will have to see if it has a connector labled "DUB". But you are not done there. The DUB out uses a higher band for the sub-carrier and so it will not likely work with your consumer S-video (Y/C). The DUB s/c was normally something like 4.54 Mhz or maybe 4.83 Mhz instead of the lower and standard NTSC video of 3.58 Mhz.
Hope is the trap the world sets for you every night when you go to sleep and the only reason you have to get up in the morning is the hope that this day, things will get better... But they never do, do they?

S-Video splits the chrominance and luminance signals at a guess, looking at the link here, http://www.alteeve.com/~lance/Hack.html I would join the Y signals to themselves and the C signals to themselves.
(assuming of course this is how you machine is wired !)
    Hope this helped somewhat.
