I just created 3 dvd's of the original star wars laserdisc set with my panny DMR-E50. I want to copy them to my hard drive and and somehow remove the main menu it created or get it to play the film automatically avoiding the menu.
How can I do this without interfering with the video once I re-burn the discs?

Lots of ways to defur this feline.
Since your data on your Panny disk isn't encrypted, all you really need do is to demux the VOBs and/or use a program that can author a disk using the VOBs. Me being me, I'd suggest using DVDLab 1.1, which can do either one.
