I would like to know if there is a simple one-touch system available for my wife to use which would be connected to a PC. She would like to convert several of our family tapes to DVDs but she doesn't want to launch program A then go to B and then C. With my travel schedule, she doesnt want to rely on me (techo-geek husband) to do this for her.

Try WinDVD Recorder from Intervideo.

That software is very good, but don't expect so good quality as standalone encoder like TMPGEnc. -
It's not exactly what you're asking, but a standalone DVD recorder would do the trick nicely. Sure, it has its limitations and it's expensive, but it is a "simple one-touch system available for my wife to use" and it's as easy to learn/use as a VCR.
