Either LPCM or AC3 is required by the dvd standard in the US. In Europe, mpeg1, layer 2 is also part of the standard if I recall correctly.

AC3, aka Dolby Digital, is the answer to your question.
LPCM should work everywhere as well, but it takes up a lot more space.
DTS is the format least likely to work as many DVD players don't come with decoders and many consumers don't have the necessary receiver to decode it.
MPEG audio is, in theory, part of the European standard, but I wouldn't be surprised if some badly manufactured DVD players didn't support it. It's unlikely, but possible to find such bad players.
