What format are your subtitles in?
Text based subs, like .srt for example, do not contain information on fonts, colors, etc...
If the subs are already in .ssa or .ass format, you can change fonts, colors by using scripting
http://avisynth.org.ru/docs/english/externalfilters/vsfilter.htm
Otherwise you can convert .srt to .ssa with srt2ssa, and then add the color script
http://www.divx-digest.com/software/srt2ssa.html
There might be an easier way to do this, but I haven't come across it yet
