I was given this thread talking about the GOP settings in Handbrake:

but I don't see where to actually *change* the setting in the GUI. Or are they talking from the command line?
Try StreamFab Downloader and download from Netflix, Amazon, Youtube! Or Try DVDFab and copy Blu-rays! or rip iTunes movies!

gops don't have anything at all to do with the quality of the video. open gops are used to reduce the size of the video file by a tiny amount, but at the expense of editing. closed gops are always preferred for editing. if you are producing end user video just use the defaults.

I was told that Handbrake creates very long GOPs which slow down seeking and initial playing, especially with HEVC files because they take lots of CPU to decode.
I was told that a smaller GOP will help me for a specific project I am working on. The video editor I'm using works better with smaller GOPs. -
You specify the GOP size in the Extra Options box. Enter "keyint=60" (without the quotes) or whatever value you want. I don't know if it's the same for all codecs but that works for x264, x265, QSV h.264 and QSV h.265. You may also want to change keyint_min, "keyint=60:keyint_min=10".
