I used the ''Philips DVDR 3355'' DVD recorder to convert a mini dv tape. Is there any way to put another photo in the girl's place, put another date, remove the philips logo? Like, just working with the config things of the DVD files? They are already in the HD.

You can copy/reauthor that disc in something like DVDShrink and have NO MENU. The DVD will just start playing when inserted into a player.

Well, you must extract the elementary streams from the VOBs and then you can author a brand-new VIDEO_TS folder.
You can use one of the various GUIs for dvdauthor or an ancient payware like DVD-lab Pro.

Then why you are posting that pic with DVD structure?
Is that 1152×864 screenshot in original resolution?

This thread discusses a few ways to edit DVD menus: https://forum.videohelp.com/threads/389295-Editing-an-existing-DVD-menu

It is possible to use freeware but the thread starter found that the paid program DVDReMake Pro was much easier to use.
