LAPL DIY Memory Lab and Question about their process

Has anyone ever tried the LA Public Library DIY free capture service? It is not currently running, but I want to build a similar capture chain, since I have the same U-Matic deck. A diagram of their chain is here.

My question is, could I use a portable video monitor such as the Blackmagic Video Assist 12g/3g to capture directly from U-Matic to SD card? Would quality be sacrificed this way versus a traditional capture card or external device. Would it be necessary/helpful to convert from Analog to SDI in this chain? In short, can the UltraStudio 4k be replaced with the Video Assist 12g in this chain?

This YouTuber seems to do this with Betamax tapes, however he uses S video out, and the VO5600 is only BNC out.
