While everyone else is discussing their workflow, let me tell you what I've been using:
Capture is using DVApp through a firewire PC Card to an external fire wire drive (seperate firewire channel) with 200 GB space. That particular drive is purely for capture to make sure I can do a number of captures before I have to do an editing run.
I use DVI V2, and then use VirtualDub with the Panasonic DV Codec to edit the AVI. Target is one of two external firewire drives of 250 GB each using the DeInterlace filter (blend) and the Smoother (mainly for the noise reduction) at 95% sharp to an MS MPEG4 V2 AVI final product. This gives me about 1 Gig per hour at 720x480 resolution.
I then playback using the S-Video video out from my computer. This saves me having to write to DVD (though I have a DVD writer) and then having to juggle a number of DVDs looking for the particular one I want. Playback is enhanced using a freeware program called myHTTP as a friendly front end.
