I keep seeing people talk about frames dropping. Does this mean that as your captureing some frames just disappear (causing out of sync sound and video?). LMK

Well they don't actually disappear as they were never created.
For example if you are using PAL to capture a video feed it should capture 25 frames per second. Now if it only captures 24 per second, you've lost or as video techies say, dropped a frame. The more frames you drop the more choppy the video feed would become, as your player would still play 25 frames per second.
