how to encode?

hello, i have many movies on my server, mostly 720p and 1080p releases, I want encode them to Xvid codec like other release groups do. i'm german so I want use for example the the german line in a good english 720p rls. (i want integrate it ).

i hope you know what i mean. i would be very happy if someone can tell me the basics of encoding, muxxing and all the other stuff.
