question about settings on Fair Use Wizard for best picture

I have a DVD (length 1hr 43 min) that does not have regular subtitles but has closed caption subtitles. The closed caption subtitles do not appear when using DVD players and TVs where I am (China). The closed captions will appear when using Power DVD, but I need to have the subtitles appear when playing in a regular DVD player and TV. I was able to extract the closed captions with VSrip into a standard subtitle file. There are number of postings on this site on how to make a DVD (and add standard switchable on/off subtitles) from an original DVD, without doing any recoding of the video. However, unfortunately, after reading them, I found the recipes simply too difficult for me too follow. So I decided to use Fair Use Wizard to recode the movie into an AVI and then use DVD Flick (and add subtitles) to recode back to a DVD. I know that sounds terrible, but until someone can make a simple recipe that I can follow to do this without recoding, this is my best choice.
I did some reading on Fair Use Wizard and I have some questions on how to get the clearest possible AVI. Since I am not trying to fit the AVI on CDs, a bigger AVI file size is no problem. In the Fair Use Wizard settings, I chose the AVI file size to be 1.4GB with 2 pass encoding. I also selected (IVTC), whatever that is.
Everything else, I just left to default settings. The resulting AVI seemed to be pretty good but I am not much of judge. Then I loaded the AVI into DVD Flick (along with the subtitle file) and made the DVD (again 2 pass encoding) which now has standard subtitles and I am reasonably happy with the result.
MY QUESTION IS THIS: are there any other settings in Fair Use Wizard that I could have tweeked to get a noticeably clearer AVI? For example, if I chose an AVI file size of 2.8GB (instead of 1.4GB), would that give me a noticeably clearer picture? [/i]

Don't go through the re-encoding. Demux the audio and video tracks from the existing DVD using DGindex, then use GUIForDVDAuthor to create a new DVD using the original assets plus the subtitles. No quality loss.

First question :I am still wondering if 2.8 GB (instead of 1.4GB) in the Fair Use Wizard settings would give me a noticeably better picture.
Second question: You mentioned 2 softwares, DGindex, and GUIForDVDAuthor to do this job without recoding. Are those the only two softwares needed? Can you give me detailed instructions on how to do this? If I can figure it out, I would like to try. Although there are many postings on this topic, they are lengthy and too difficult for me to follow.
