if you just play vob files you can't select any subs, audio you need a dvd player that can open the entire dvd, like select video_ts folder or video_ts.ifo file.

If you're asking "How can I select different audio and subtitles in a DivX AVI?" it's really vary player dependent, as there's no standard for this like for a Video DVD. It may even not be possible.
Best "fits all" solution is to make a hard subbed AVI with the one audio track you want, from the DVD.

Divx Ultra Certification (multiple menus, multiple audio/subs)
for audio and subs use the Dr.Divx2, if you want to use menus use Divx media builder to make them
I love it when a plan comes together!

Like I say, very player dependent, and no standard...
