If I set up a dual boot and had one OS dedicated to capturing, would I notice any benefit than haveing one OS and capturing to an empty drive?

Mayby i got you wrong, but I'm using 2 OS (win ME and win XP). I use this since win ME uses VFW drivers and win XP uses VDM drivers....works very nice.

If you are using two separate OS i.e. one for you main system and one to capture with this is a very good idea.
Keep you capture OS very lean i.e. no virus killer and only the programs you need to capture and basic drivers without all the extra utils bolted on. i.e. if you have a sound blaster just install the drivers not the extra crap which is on the CD.
Also if you can afford it buy a separate capture drive and capture to this. As soon as you have finished with your project remove it from your drive to your target media an start on your next with an empty drive.
