I just want to run some test conversions to see how converting to .vp8 taxes my specific systems vs. AVC/h264. I keep reading that Handbrake started supporting .vp8 encoding with v0.10 but I can't figure out where or how to set it. Is this a CLI only thing or is there some way to do it through the GUI?

Are there any other GUI based programs that would let me run some conversions to .vp8?

Well, that made a big difference. I had tried all of the presets, I have been googling all morning and trying Freemake, Super, Xmedia, etc and pulling my hair out.

    Thanks for the assist.

If you want a .webm VP8/VP9 there is always WebMConverter (aka WebM for retards, called that by the GUI developer). It accepts Avisynth and uses ffmpeg for encoding.
