Use SmartRipper to rip the entire DVD's image in File Mode to a folder. Then use FlaskMPEG to load the IFOs and select your audio track and subtitle language. You can then use Flask to export the streams to DivX, frameserve to TMPGEnc with AVISynth 1.0 Beta 3, or export to any format you have the codec for.

I've been using the method/guide at:

lots of steps but it works. I've had trouble with FlaskMPEG but other people have gotten it to work for them. Basically you:
rip with smartripper -> use DVD2AVI to make a video and audio source file -> use VFAPI codec to make make a avi -> load everything in Virtual dub, enable subtitles, resize, crop, etc. etc. -> frameserve to TMPGenc
I do this to make subbed VCDs of anime (japanese animation) DVDs.
