Converting to FLV results in jumpy, grey 'solarized' video. By 'solarized' I mean it flashes between poor quality, jumpy, and a grey 'solarized' look. Constant flashing all the way through the video.

Any ideas?

That is only the last part of a log, where flvtool2 does its thing. It is just meta data. It doesn't hold any vital information for playback, about any encoding errors if present, as reported by ffmpegX.
