  1. I need some good AC3 5.1 and DTS 5.1 encoder.
Some converters (e.g. Xilisoft) support AC3 5.1. Is it good quality?
Do you can recommend me a some good converter.
    I can't find some DTS 5.1 encoder.

    SOLUTION:
eac3to is good free ac3 and DTS encoder. It is difficult to notice the difference between two audio tracks (ex. AC3 480kbps and DTS 768 kbps / eac3to and surcode).

  5. Listen both and decide for yourself. You can not compare lossy audio codecs or same lossy audio codec with different settings by looking at waveform/spectrogram. You need to hear both versions and look for differences if those are audible.

P.S. Make sure that output level is the same for both files. Louder file is perceived as better even if it may not be.
