As a final note, I was able to do it in VirtualDub with external encoders and opening an avs file. I think it didn't work on my first attempt because I assumed x264 would output an mp4 file, I needed a muxer even without an audio stream. Now with proper external encoder settings, everything works nicely! I only have to remember to reopen the avisynth file every time I want to start a new recording. Yay!
