From 8 mm, to mini-DV, to DVD. Good job?

In 2002 some company captured my 8mm films in DV.

I edited the DV's in iMovie and burned them to DVD, using iDVD.

For the most part the DVD's look nice on my Panasonic plasma. But the motion in some scenes is a little shaky. Please take a look at these samples:

Is this due to the way it was filmed? Or is there something wrong with the way the 8mm films were captured or the DVD was encoded?
