I've been using AnyVideoConverter to convert both mkv and avi files to mpeg2 to use on an older DVD player. One problem I've run into is the ones with hardcoded subtitles are not showing in the mpeg2, no matter what the subtitle setting for the conversion (use VLC, Zoom Player Pro). Are they hidden somewhere that can be retrieved? Or is there another converter that will handle them?

It's better to make selectable subs anyway. Extract the subs and use a program that can add them to the DVD . One such is AvsToDVD. Maybe they were embedded (different from 'hardcoded') and maybe AvsToDVD can extract them and make selectable DVD subs for you. Not sure, but you could ask in the main AvsToDVD thread.
