Best way? Wiring or in editing?
Does going from an XLR mic (Sony ECM-66B) to my HV40 stereo jack with the Hosa cable (second link below) defeat the purpose of having a high end mic? Should I go into the HV40 in mono and duplicate audio tracks in Vegas Pro 11?
The two items above are wired differently. I bought the second (Hosa) on ebay.
I'm doing voice - monologue and want the same on both channels.

Kind of. That cable is a passive cable, doing nothing WRT impedance mismatch nor level adjustment, and only fudges the balanced to unbal connection. It will work, but not near optimal. Better (pro quality-wise) to get an active mixer/adapter/balun or just plug in the xlr and do the mono thing in post as you mentioned.
But who knows? You might be satisfied with it...
