I'm looking towards building a new editing system. I'm in no rush, and just weighing up my options right now and I thought I'd ask people here what they think.

The two main chips I've been looking at are 6-core LGA2011 and s1366 xeon 6-core ( dual cpu setup ). Obviously money is an issue, I don't want to spend any more than I have to, but £2000 is my absoloute limit.
Generally I use Adobe Premiere cs 5.5 with mainly DLSR and XDCAM footage. I understand that the dual xeon setup would understandably faster but what I'm wondering is how much faster and whether it'd justfy the extra £500 over the LGA2011 I could build.

Both are these are pretty beasty. I'd assume the LGA2011 would be slighly slower, but it's about £500-£600 less than the Xeon. However, with it being quad channel, what would the real world benefits of that be within my editing timeline? Would I be getting more bang for my buck with the LGA2011 being that it's a little more future proofed with SATA III and USB 3.0? I have too many questions right now. It'd be interesting to hear from someone with experience in using both in a video editing situation. But all opinions are welcome.
