First things first, use the "Line-In" input on your computer/soundcard if you have one and not the Mic input. On some computers the port serves both purposes, but you may need to toggle between them in the settings.
Since you've got a stereo cable and a mono VCR, you might want to try the other side of the cable in the line-out on your VCR. Also make sure to look at your Windows/Sound Card volume control and make sure the line-in device is selected for recording devices. You might want to 'un-mute' it on the playback side so that you can hear it / test it out.
