I am currently rendering my movie to MPEG2 (.m2t) in Sony Vegas 9.
I am using the HDV 720-30p (1280x720) profile for this.

When finished, i need to do quick re-edits to it in Vegas, then re-render with above settings.
Then, i want to bring everything to DVD Architect and hardcode some subs onto it.

The final product should be 1) a DVD and 2) an MP4-file for Youtube.

Is this a good workflow for getting a DVD and MP4 file with subtitles and minimal reduction in quality over
    re-edits and renders?

DVD doesn't support 720p. DVDA will re-encode it.
