Which is the best guide and free software to record a video stream?

The software and method for recording a stream changes all the time. Is there a simplified system and guide to capture to avi (in a reasonably small size) a presentation that lasts a little over an hour?

Does screen capture have to take place in full screen mode?

I know this is a common question but I have not doen this technique before.

I have familiarity with AGK, DVDFab and Nero Vision Express but that's about the limit.

what kind of streaming video are we talking about? from video site like youtube? or something else?
