I love to use the movie "The Mighty", with Sharon Stone, when I teach jr. high school kids. It is full of so many object lessons. I found a dvd with traditional Chinese subtitles but I really need simplified subtitles for kids on mainland China. Is there any way to take the file of traditional Chinese subs and convert them into simplified subs?
Try StreamFab Downloader and download from Netflix, Amazon, Youtube! Or Try DVDFab and copy Blu-rays! or rip iTunes movies!

Look on http://shooter.cn/ for simplified subtitles. You'll probably want to rip and encode the movie in order to use it with the subtitles (you can use Handbrake for this).
(You can't convert DVD subtitles directly, because they're bitmapped and not text.)
