Will any of these motherboards handle the RAM listed. I see that they OC to 1800 but not sure if thats the limit or not.

If you want detailed information go to a good overclocking forum site like overclock.net.

Overclock.net is a great forum site to learn about overclocking cpu, gpu and ram. GSkill has models that overclock better than others. If you want good overclocking ram there are other brands such as OCZ, MUSHKIN & CORSAIR.
