I recently became familiar with the blu-ray ripping process and I have a quick question. I purchased anydvd hd to remove encryption, but it seems you can only rip the entire disc and not single files. Is there any way to use anydvd or another piece of software to remove the encryption on a single m2ts file? Thanks!

Have you just tried copy the m2ts file from the BDMV/STREAMS folder using the explorer?
And I just tried it on a blu-ray with anydvd enabled and it worked to copy one random m2ts file and then play and edit. If you are using Windows XP you probably need to install a UDF Reader to see the files.
Actually that's what I did do. I want to convert the m2ts file to h264 now but the file is still encrypted. Perhaps I'm understanding the nature of the encryption incorrectly?
I copied over the m2ts before I bought anydvd. MPC and MPCHC both say "cannot render file". I plan to convert using this tutorial:

However the test Avisynth script fails (due to the encryption I assume). Thanks for your help.
Copy the file again when you have anydvd enabled. I don't think you will find a way to decrypt the file from the hdd.
