is it possible to encode vidoes in Ogg Theora format with ffmpegx ?

No, ffmpegX cannot convert to OGG. But there is a command line ffmpeg2theora by a different developer. They also have a Mac package of the binaries, so you don't have to compile it yourself.

I hope that ffmpegx will be able to convert to OGG in the future, because of HTML5 and the open video format.

Firfox 3.5 now supports the OGG Format without plugins and I hope the other Browsers will do so in the future.
