  1. So, all I want to do is take an mpeg that I have, make it grayscale, and then save it that way, BUT I want to keep the original quality... So far, all the free editors I've tried don't keep the quality.

I guess my question is this: What's a free program that can make my mpeg grayscale, but will keep the original quality after the fact?

Any help would be great, thanks!

You have to re-encode. If you use lower settings you will lose quality. If you use the same settings you risk using quality, depending on what they are.

I would try AVI Demux first, but use higher bitrates than the source.

Otherwise I would use avisynth and HCEnc. It is trickier, but the quality should be better.
