    I've converted a 2.5mb sub file using subresync, but the resulting 30kb srt file only contains the subtitles required at the 12 minute mark, 20 minute mark, 56 minute mark...etc
    These work OK but where are the rest of the subtitles?

    Then you try something else, like avidemux(under tools->ocr sub to srt) or subrip.

    I got exactly the same result with avidemux, except the subresync output file was a lot easier to read.

    Roughly speaking, how large would you expect the sub file for a 1hour movie to be?
