DVD Authoring/ MKV , multipile issues

Hello,
I have several problems with my DVD authoring. I'll try to explain as best as I can, but my English isn't 100% , because I'm actually Dutch.
Anyway, I'll try:

I have several MKV files of the same series. Each file has great quality and I would like it to stay that way.
I want to put it on a DVD with an as complex possible menu. Without being it to technically ^^'' .
I have some experience with Nero 8. For every file I have a seperate subtitle-file (.srt) .
So here's the problem:
Some of the 26 mkv files have a subtitle built-in.
I want to remove this one and put in my own subtitle file. Then I want to burn all of these on several dvd's with a complex menu, but without losing the quality of these mkv files. I also want to have a subtitle-menu , where you can choose a subtitle stream. ( my own, then. ) Is this all possible ?
In short:
- mkv file to another file which is compatible for DVD authoring without losing quality
- remove a subtitle-stream from the mkv file
- a subtitle-menu
- as complex as possible menu's, but not too difficult ^^''

Well, if someone could help me, I'd be really happy ^^.

You will lose quality when converting to dvd but if you use high enough bitrate(max 2 hours video/dvd) you shouldn't notice too much difference(dvd quality then...no hd quality).


Complex:
For a "complex" menu you probably need something like dvd-lab pro (or tmpgenc authoring works or other advanced dvd authoring tools) but it requires mpg video streams so I would then
Use Mkvextractgui to extract subtitles from mkv.
Convert to dvd video files using for example FAVC, load the mkvs for each dvd(max 2 hour video), choose to KEEP working files and convert.
Load the mpv/mvp video and ac3,mpa audio files from the working folder into dvd-lab pro. Import the extracted subtitles files. AUthor and burn the DVD.

Or if you don't need that advanced menus you can try an all-in-one tool like convertxtodvd, load mkvs, choose a custom menu, convert and burn. I think you will get a subtitle menu for each track/title.

Instead of FAVC, try AVStoDVD, which has an option to output directly to elementary streams without authoring. FAVC will make you wait through the authoring process, even if all you want is the working files. Both use HCEnc for encoding, so quality should be comparable.
