    Are there any consumer video camera's that do 1 frame recording for some old school stop-motion animation?

    None that I know of but you could use the camcorder as a camera and then assemble in an editor.

    The better way to do stop frame is connect the camera in live mode and use a stop motion program to cap frames. These show a composited history of frames so you can use it as a guide for figure placement.

    I think there is a free or cheap program. Google "stop motion video".

    Your best bet would be to use a digital camera and take digital photos.

    It seems to me that a tripod and a shutter button on a cable would be all that you'd need.
    Even a broken clock is right twice a day.

    Don't even need cables anymore, cheap HongKong-made IR and radio switches now work too. Use a good DSLR with a good lens, otherwise the film will be fuzzy crap.
