when re-authoring in DTOX, you can do a Movie Only backup,
and then select the Main Title of your movie, and then if
that title has more than one track ( audio commentary track, DTS, or
standard) you can select the default track you want to play back
in the backup by de-selecting the other tracks than the one you
want. But that will make the Movie Only backup play ONLY with
that track and that track alone. You won't have anything else to select.

If you are wanting to change the UOP ( User Operand Prohibition) to
make say the DTS track be the default audio track, but still have the ability
to switch to other audio tracks, well, then you are talking about
    re-authoring the disc.
For that you'd need DVD Studio Pro, and MTR ( the latest version).
