DVD Authoring? Can't do it, need tutorial

I've done dozens of setups, but they all fail at the authoring stage, I can make them using Sizzle, but I want to see ffmpegX's authoring work for me, I've got both my audio and video files, both are correct in spec, so HOW do I put them into ffmpegX for JUST authoring?
So far, the new version is rocking along very nicely, but this is a bugaboo that's driving me nuts!
