What would be the easiest way to add audio tracks or subtitle tracks to an existing DVD? I have several DVDs in both Italian and English. I would like to simply rip out the Italian language/subtitle tracks from the PAL version and add them to my NTSC version.

I'm assuming that there is some type of tool (IFO Edit seemed like it may do this???) to take existing VOB structures and allow editing/additions, but most I've seen appear to require complete reauthoring.

Can someone point me in the right direction or tell me how they've accomplished this?

    Thanks.

I eventually figured this out, so here's the answer in case anyone wants to know...

Demux all streams with VOBEdit from both DVDs and then use IFOEdit to reassemble the tracks/subpictures wanted.

IFOEdit doesn't seem to do a good job when you have many subpicture elements though. I ususually reports an error. I was trying to add about 10 subpictures. When I dropped the number to two, it worked fine.

As far as I can tell, IFOEdit is one of the few freeware programs that allow this type of operation (multiple audio and subpicture streams).
