Many implementations of SubRip .srt don't support styling. Some players may support it, but others won't.
You may want to see if other subtitle formats better suit your needs.

As Case said; SRT doesn't officially include any styles, fonts, colours, positions, etc. There are hacks using HTML codes as you have, that work in some cases, but not others.
If you want a properly styled subtitle, use ASS format, coded using eg Aegisub.

Extract the srt from the mkv with mkvextractgui-2. Convert to ass/ssa. Add back to the mkv with mkvmergegui. Done.

Check under Extra Options that both the video and audio have compression settings set to NONE - this might be the problem.
You need to highlight first the video and then check and then the audio.
