I despise subtitles and dont understand why people hardcode them into shows. I downloaded a star trek documentary which has chinese or soemthing subtitles both along the bottom and along the right side of the show.
I want to remove these. whats the best way?

Try StreamFab Downloader and download from Netflix, Amazon, Youtube! Or Try DVDFab and copy Blu-rays! or rip iTunes movies!

You cannot remove hardcoded subtitles
if its documentary legal to download, just download version without hardcoded subtitles -
sorry but if that was an option, I would have done it and not asked the question

You can try VirtualDub and some logo/subtitle removal filters, but you will just end up blurring them.
